Meet our Sommelier
Thierry was born in Paris but spent much of his childhood in Chablis. He began his career at L'Arpege in Paris with the legendary Alain Passard. His first job in England was at Chez Nico where he first met Steve in the mid 90's and went on to work his way around the London restaurant scene.
A real turning point for him came whilst working at Petrus, confirming his passion for wine, particularly discovering small producers and a real passion for biodynamic wine. Thierry believes that wine produced in its natural environment and reflecting the region just like with food is secret of a great wine.
